How to Eat Beets in a Smoothie (and Why You Want To)

Beets are known for having many health benefits. I love the taste and use them often in smoothies, as a side dish, and in salads. However, in researching more on the health benefits of beets, I discovered that they are known for so many amazing things.

My signature beet smoothie is a regular in my green smoothie rotation. Despite being bright red, I still consider this a “green” smoothie. It’s full of greens, beets, and a little fruit. It’s gorgeous, delicious, and best of all, good for you.

I am a green smoothie fan for several reasons. I like to eat and get the benefit of raw, organic fruits and vegetables and a healthy smoothie helps me get a few servings of veggies and a little fruit in daily. It’s pretty much salad in a glass!

After discovering the health benefits of beets, I make sure to add them to my diet a few times a week.

Many of the green smoothie recipes you see on the web have a lot of fruit in them. Mine always have two vegetables and two fruits. One of those vegetables is always a couple of handfuls of sweet greens such as spinach, kale, or chard.

I make this healthy beet smoothie once or twice a week. Beets keep really well and I try to keep some on hand. It’s got a whole beet in it, the greens, a banana, and an apple as well as a few extras to keep it interesting.

This smoothie is full of greens, beets, and a little fruit. It’s gorgeous, delicious, and good for you. Get the health benefits of beets in a smoothie.

The Health Benefits of Beets

Beets are loaded with nutrients. I found article after article claiming that eating beets does everything from increasing your sex drive to preventing cancer. Adding this gorgeous vegetable to your diet seems like a good idea.

  • Beets are loaded with vitamins and minerals.
  • Studies show beets help lower blood pressure.
  • Beets help with  inflammation.
  • Some studies show they improve energy and athletic performance.

My fiance’s doctor recently suggested he drink beet juice to help with his blood pressure. It seems to have helped as he hasn’t had a blood pressure spike in weeks. In researching, I read that this is a temporary effect and depends on regular consumption of beet juice.

I prefer to drink a smoothie or eat roasted beets instead of drinking the juice. By eating the whole beet, you get the benefit of the whole vegetable including the fiber.

This is not a sweet dessert tasting drink. Though the fruit does give it a certain sweetness, it’s “green” for a reason. And that reason is to get some vital nutrients into your body.

You may have noticed from the picture that this smoothie is not actually green when it’s all mixed up. The beets color it a beautiful shade of dark pink. Since it has two cups of greens in it though, I still consider it a “green” smoothie.

Beet Smoothie Recipe

Add to your blender in this order:

  • A couple big handfuls of your favorite sweet greens. (about 2 cups) Spinach, kale, and chard taste great. I like the power/super green mixes as well.
  • 1 apple OR ½ an apple and ½ orange
  • 1 frozen banana
  • 1 small beet or ½ large RAW beet, peeled and chopped. Sometimes I will wear gloves to do this part and I always use a plastic chopping pad. Beets can be messy.
  • 1 to 2 scoops Vital Proteins (Optional)*
  • 1-2 tsp. of light tasting olive oil
  • Water

*Vital Proteins have become something I add to either my coffee or green smoothie in the morning. My results are just that–my results. But I am a believer! My skin, hair, and nails have never been better. They have no taste. The Amazon price is better than I’ve found in my local store.

Start your blender on a slower setting to get things chopped and moving. Then finish on a higher setting to make this concoction smooth and drinkable. **** This is very important—start slow and gradually increase speed. Starting at high-speed will send your smoothie flying out of the blender!

Notes on the Ingredients

Greens: I like sweet mixes such as Super Greens or Power Greens. Spinach is mild and sweet and works well too. In fact, I keep a bag of frozen spinach in the freezer for times when I’m out of fresh.

The Beet: Beets are kind of messy to peel and chop so I try to be really careful with them. Sometimes I will wear gloves to prepare them and I always place a flexible plastic cutting sheet on top of my cutting board. First, I chop off top and bottom. Then I peel the beet with a potato peeler. Finally, I chop it up and add to the blender.

Water: Don’t add too much at first. Oranges and apples are juicy. You want it drinkable but not too watery.

The Oil. I use light-tasting olive oil or coconut oil. Do add oil. It helps it have staying power to keep you from getting hungry and quality oils are really good for your skin. I don’t usually recommend it because of the strong taste, but in this recipe you can use virgin olive oil.

Bananas. I let them get ripe—no green peels! Then I peel them and put them in a freezer bag in the freezer. You can break them into smaller pieces at that time or do it when you make your smoothie.

Why no dairy? I don’t add any milk or yogurt to my smoothies. I think the reason it gives me good energy is that it is so clean and fresh. The collagen, oil, and banana give it plenty of body.

Remember, variety is the key to a great diet and this is a way to get a vegetable that I don’t often eat otherwise. So yes, beets in a smoothie is definitely one of my favorite ways to eat beets!

    Do you cook the beets or use them raw. Can you use jarred beets?

      I like to use raw–peeled and cut into chunks. I’ve used cooked before and the taste is different. If you like the taste, it sure would be an easier way to make the smoothie.

    You and I think along the exact same lines!!! I use beets in my smoothie almost daily…they are so full of fiber and nutrients that I am sure they are one of the best vegies out there! I do the same as you and add kale/spinach and the frozen banana which gives it a nice smooth flavor and mellows the “earthy” taste of the beets! I add blueberries, coconut oil and I often blend with coconut milk too. I tend to throw more veg in my Vitamix and occassionally avocado or the seed (which apparently is extremely beneficial and full of antioxidants). Like you I can’t be bothered with salads for the most part and by juicing in the morning I give myself a good dose of fruit and vegies to set me for the day! ( I’m one of those ones who don’t often take time for breakfast on my early work hours.) Loved reading your blog! Thanks so much!

    Super interesting post! I read this because I know I should eat beets but I don’t really like them. So adding them to my green smoothie seems like the perfect idea. I had never thought of putting a raw egg or oil in my smoothie. You’ve given me lots of great ideas! Thank you!
